Yields 10 guests

For the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Combine the listed ingredients in a saucepan, bring to a simmer, agitating until the sugar dissolves. After that, turn off the heat allowing it to cool fully. Pour into an sterilised bottle, close it and store in the fridge, it can be stored for up to four weeks.

To make Cocktail Base: Mix all the liquid ingredients into one big jug, leave to sit for one hour, then strain best through muslin, so it's fully clarified.

For serving: Pour 85ml of the cocktail base into your stirring glass packed with ice, gently stirring lightly for a minute to cool it down. Pour to a cold coupe glass or similar, top with some cranberries and complete it with a light spray with the mandarin essence above the glass.
